When we visited the allotment last night to shut up the greenhouse I was reminded by littlest digger of a stash of previously unnoticed raspberries…
A bowlful of raspberries was the result of a stray cane hiding behind the shed (probably more if we counted the amount inside littlest digger!)
Obviously not enough to share between 4 hungry gardeners so cakes win hands down.
Littlest digger loves to bake especially since Head Gardner showed her the balance method so she set too making a simple cake batter and then we added in raspberries and lemon zest.
We had run out of icing sugar so we drizzled lemon juice, zest and honey over the top of the cooling cakes. The verdict – “you can make these again!”
